Let’s just get one thing straight-I am a horrible baker, but I can make one kick ass apple pie! I don’t even eat apple pie, but it’s a good one! I have sampled it. I’m just not a pie person. I do however live on an apple orchard ,so I’ve learned to make something with a fruit that I have in abundance. Now don’t panic, remember the part where I said I’m not a good baker? Well, I cheat and buy the crust-so if you too are a horrible baker know that you can just follow this recipe and make a fabulous pie, too!
Ingredients:
1/4 cup brown sugar
1/4 cup granulated sugar
1 TBS all-purpose sugar
1 TSP grated lemon zest
1/4 TSP ground cinnamon
1/4 TSP ground nutmeg
6 medium baking apples, cored, and thinly sliced. About 2 pounds, those green granny smith apples have less water and make a better pie!
1 unbaked, ready-made 9 inch pie crust
For The Glaze:
1 large egg beaten
1 TSP granulated sugar (optional)
Place all of the ingredients in a large saucepan with 3-4 TBS of water for about 20 minutes. Cooking the apples helps release the water and saves you from having a drippy, runny, pie. Set aside and let cool before adding them to the crust.
Preheat your oven to 425 degrees and spray a 9 inch pie plate with cooking/baking spray. Spoon in your apple mixture and add the top crust. Trim edges and press down on pan. Cut small slits in the top to vent steam. If you want to decorate your crust use your cookie cutters and cut out fun shapes! (like the turkeys above) Lightly brush beaten egg over the crust. Sprinkle with sugar if you like.
Bake until pie crust is golden brown about 35 to 40 minutes. If your crust gets too dark too fast, cover about 20 minutes through with foil around the edges.
