We eat a whole bunch of eggs here at my house. We have 6 hens and even now that it’s cold and the days a snowy we are still getting plenty of eggs. That’s a good thing considering that my son is a vegetarian and needs that protein. We love our birds and having eggs that come from happy hens is something that’s important to me. The Happy Egg Co. feels that way too. Their hens have daily access to over 4 acres of land and are free to roam. Each of their Free Range hens have 14 square feet of space. A typical hen has only 8 1/2 by 8 1/2 square inches of space. ( That’s less than the size of a piece of paper!) Caged Hens come from hens that live their entire lives in a wire cage and they can’t even flap their wings. (My girls love flapping around.) Cage Free Eggs come from hens that are locked inside all of their lives. They never even get to go outside. Now you can see why the hens from the Happy Egg Co. are so happy.

How to make Oven-Baked Eggs in minutes:
I wrote a post back in 2012 on how I make Money Saving Breakfast Sandwiches. I hand cooked each egg on those sandwiches. Now I know better!
1. Preheat oven to 350. Determine how many eggs you will be needing. I fill an entire cupcake tray for 4 of us. They should last a week.
2. Spray your cupcake/muffin tin with non-stick cooking spray.
3. If you’d like to add a veggie now is that time to do it. I have made these with Spinach, peppers and onions, etc. Basically any veggie you like, place it in the bottom.
4. Crack an egg in each spot. Add salt and pepper.
5. Place in the oven and go! Depending on your oven and how you like your eggs cooked they will be ready in 15-18 minutes.
I use a spoon to get them out. Just wait for them to cool and place in an airtight container and your set! You can reheat them in the microwave 20-30 seconds or in a toaster oven. Eat them alone or on an English Muffin.
You can add some Oven-Cooked Bacon, sausage, cheese, or whatever your heart desires! Don’t want the yolk? No problem, you can make these with just the eggs white or easily pop the yolk out after they have been cooked!

Oh I LOVE baked eggs! I make eggs for sandwiches, too! If you use a muffin top pan, they will fit perfectly on an english muffin!
