I signed up to take the Udi’s Gluten Free 14 Day Challenge. Last year I started having issues with my stomach and underwent much testing. Although I don’t have Celiac Disease, I do suffer from Gluten Intolerance. That means that I have issues digesting gluten. Most people aren’t aware that you can develop Gluten Intolerance or Celiac Disease at any point in your life. For me it showed up in weight gain, bloating, fatigue and the inability to concentrate. It’s been hard trying to stay gluten free. I think that I have probably spent more time focusing on what I can’t have than on what I can actually eat. I also was overly focused on the cost of eating gluten free. So, when this opportunity came my way I jumped on it and I’m glad that I did.
In addition to yummy products and free product coupons Udi’s also sent me recipes and a two week menu plan to help in the process. I have to be honest, it has changed my life. It is easier than you think to get gluten out of your life. Since Udi’s was standing behind I was strict straight across the board. I ordered Gluten Free when I ate out as well. The fact that I was able to walk out of a restaurant not feeling as if my pants were going to explode sealed the deal. I began reading labels on items that I already had in my home that I had no idea contained gluten. My energy has increased and I don’t feel bloated after I eat anymore. Another exciting thing for me is that I can eat foods that couldn’t before and actually enjoy them. Here is a quick recap of the Udi’s foods I liked the best!
Yes, pizza! One of my biggest downfalls is pizza. I have fallen in love with these Udi’s Gluten Free Pizza Crusts. Now, when I get the urge I can just put together my own pizza. Having these crusts in my freezer has saved me from my pizza problem and so has many of their other products. Udi’s Gluten Free bagels are true tasting like any “regular” bagel. I can actually eat a bagel and not feel bloated. I was also surprised by Udi’s Gluten Free breads. I’ve tried a few different brands, but was never truly satisfied. My favorite: Udi’s Gluten Free Soft &Hearty Whole Grain Bread. When I toast it and get it nice and crusty it makes an awesome sandwich! My boys also enjoyed the Cinnamon Raisin bread with some butter in the morning. I know some parents would like to put their children on a gluten free diet and are scared that their children might not like it. My two didn’t even notice. Especially when they got to enjoy Udi’s Gluten Free Double Chocolate Muffins and Dark Chocolate Brownie Bites. Their favorites are Udi’s Snickerdoodles!
How do I know that I’m going to stay Gluten Free? After the storm this past weekend I ate some things I probably shouldn’t have and trust me I felt awful. I’m never going to feel that way again. Thanks Udi’s!

that’s great you’ve found some foods you can eat and enjoy! I was trying to put together a kit for a friend in need, who can’t eat gluten, and I was really surprised by how much has gluten in it!

I have a girlfriend who doesn’t ‘technically’ have CD, but she has to stay gluten free because of the pain. I am glad you found something you enjoy!
