My husband spends all sorts of money picking up food here and there in his travels. He works construction so his hours aren’t regular and most of the time he’s up quite early in the morning. I try to have several grab and go breakfasts available for him. This way he won’t be tempted to stop and eat something unhealthy and unsavory from a gas station or fast food establishment. Last week I tried my hand at making my own frozen breakfast sandwiches. When it’s cold outside nothing is better than something warm to start your day. So, here is my first round and I’ll tell you where I went wrong, what went right and what I plan on doing next!
Here is what I used:
I used a can of biscuit mix to make 8 biscuits.
Veggie Cheese Slices ( These are non-dairy)
Turkey sausage rounds
Fresh eggs
So, first I made the biscuit and let them cool. I cooked the sausage to package directions. Then I cooked 8 eggs over easy, here is where I made my mistake- I should have scrambled them or made mini omelets. I like a runny yolk so I had to cook these a bit more than I would liked to make the sandwiches. Next I cut the biscuits, added the sausage, then the egg and finally the cheese. Once the sandwich was complete I wrapped them in foil and placed them in a freezer bag to freeze. I would pull one out at night and place it in the refrigerator to thaw. In the morning, the foil needs to be opened and the egg and cheese need to stay on one side of the biscuit and the sausage on the other. Rewrap and place in the toaster over at 375 for 15-20 minutes till warm. You can also remove completely from the foil and place in the microwave. Although this option isn’t as good, it works and is fast.
The results:
One can of biscuits makes 8 sandwiches at about 300 calories give or take a few. Not bad. They cost less $1.00 per sandwich. If you used regular cheese you could probably make a sandwich for around $0.50 or go without cheese. My husband loved them and so did I. I actually stole one and cheated on my gluten free diet, but I’m going to make me some gluten free style!

I make coffee cake, and save individual slices in zip-top freezer bags. Yummmm! I like the end of fall when there is a good variety of flavors– some apple coffee cake, raspberry cream cheese coffee cake, banana bread coffee cake. If I run out of granola bars for my school lunch, I’ll throw one in my lunch bag too.
