With Spring in the air fruit is an even bigger hit at my home. Driscoll’s sent me several coupons to get me in the mood for Spring. They have even expanded their recipes section on line at http://www.driscolls.com/. Personally, I like to enjoy my berries just as nature intended – untouched, but it’s always fun to try something new. So, I went to the Driscoll’s recipe section and I made a Creamy Lemon Strawberry Smoothie with Coconut Water! Yummy! I’ll share the recipe below. My oldest enjoyed it, but for my little guy I just blended some ice cream, Driscoll’s Strawberries and milk to make a terrific milkshake. Berries are so versatile in drinks. I even enjoy adding sliced strawberries or whole raspberries to my water to give it a little natural boost in taste. Also, when you do that for guests it can make you look impressive and thoughtful. Now as it gets warmer I love me a nice Strawberry Daiquiri, but it doesn’t end there. Last year I shared with you a recipe for a Pink Raspberry Cosmopolitan. It is certainly one to check out.
Creamy Lemon Strawberry Smoothie with Coconut Water
INGREDIENTS
- 2 cups Driscoll’s Strawberries
- 1 cup filtered water or coconut water
- 1 cup ice or more to preference
- 3/4 cup raw cashews
- 1/3 cup pitted dates or 3 tablespoons pure maple syrup
- 1/2 cup (1/2 banana) fresh or frozen banana, chopped
- 3 1/2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
Optional Ingredients
- Pinch of finely grated lemon zest
- Pinch of Celtic sea salt
Directions
Place all ingredients in a high-speed blender and blend until smooth and creamy. Usually about 30 – 60 seconds. Tweak the flavors to taste.
You might want to add more ice, a little bit of lemon zest, more sweetener etc.
As a mom, the best part about keeping berries in the house is that my kids love them! I can simply add them to breakfast, lunch or dinner and my boys get lotes of tasty fruit. They also enjoy it when I dress up their plates with berries. It so easy to help them feel special by making a smiley face or a flower out of some yummy Driscoll’s berries. So, don’t forget those berries when you shop!
