I’m starting a new weekly post that lays out my family meals for the week. Actually, it’s just dinner for now, lunch and breakfast kind of just fall into place by themselves.
I’ve been trying to keep an eye on my budget and one of the biggest mistakes I make weekly is too much take out. I love to cook, but life happens. Someone gets sick, I have an unexpected change in plans then dinner goes out the window.
Today is Sunday and I did a quick inventory of my cabinets and fridge and found that I have plenty for the week. I just needed to think it through and write it down. I’m going to do a quick check of my grocery store flyer and coupons and see what deals I can grab for next week.
So this week’s menu:
Mon: Harvest Butternut Squash Soup, Rice, and homemade pesto bread
Tues: Curry stew of green beans,peppers,summer squash,and coconut milk
Wed: Cajun Shrimp Pasta
Thurs: Vegan Chili
Fri: Leftovers/vegetable soup
Everything is homemade unless I note that it’s not. A few disclaimers: first of all we have a winter farm share so I have access to lots of fresh/frozen veggies. Secondly, I’m trying to switch us over to a Vegan meal plan, but so far vegetarian seems to work for us best. The lack of meat is preference not money.
As, this is a new feature I don’t have a file system set up yet, but I will where you will be able to access my recipes. If you are interested in any of this weeks recipes just drop me a comment or e-mail and I will get it to you or wait till next Monday and hopefully I’ll have my files up!
