So, I’m late again, but this is a good thing this time. I had to change my menu anyway. One thing that I find myself doing constantly is NOT reading a recipe completely before I begin. You’d think I would have learned by now. So that is what happened to me on Monday night. i began to prepare the recipe only to realize that I started too late and it would not be ready in time for dinner. Lucky for me that I had a freezer meal that I was able to pop into the oven.
My advice: When making your meal plan for the week pick something that would freeze well and make double the amount. This has spared me much agony when i have those days that I don’t want to cook or something happens and I can’t.
So here is my week:
Monday: Spinach Stuffed Shells (freezer meal)
Tuesday: Chicken Quesadillas with a side of brown rice
Wednesday: Eggplant Stuffed Peppers
Thursday: Vegan Chili
Friday: Tilapia with sauteed kale
My tip: both the chili and peppers here freeze well, I’ll double one and make a freezer meal!
