A big barbeque favorite here is grilled zucchini’s! They seem to be a huge hit at every party we have at our home. The best part about them is that if you have leftovers you can save them and use them on sandwiches during the week. So, yummy! We also use them for toppers on burgers, especially veggie burgers which can get kind of dry. These will make any dry burger more juicy. So, here is my easy breezy trick to great grilled zucchini’s.
Ingredients:
Zucchini
Italian Dressing ( I prefer Newman’s)
Thinly slice zucchini lengthwise. ( I cut mine using a Zyliss Easy Slice Mandolin)
Place in either a large Ziploc bag or container with lid ( such as a Pyrex or Tupperware.) Pour in some dressing and shake till all the slices are coated. Preferably let sit for 30 minutes or longer.
Now, you can either place the Pyrex directly on the grill or you can take the zucchini out and place them on the grill. ( That’s how I roll. I place them right on the grill) Coat with any leftover dressing in container while grilling.
Grill to your liking.
Makes a nice side dish or sandwich add on. Enjoy! Let me know how you like it.
