I’ve been doing alot of experimenting with my food lately. I always seem to get inspired during the CSA season. The large variety of fresh local food available to me seems so exciting. I also have been suffering some food insensitivity and I’ve been trying to think outside of the box when it comes to my food.
So here’s what I’m most fond of this week: grilled corn tortillas with well- just about anything on them!

corn tortillas, with artichoke and olive oil spread, fresh local spinach sauteed with local green onions and garlic scapes, organic cherry tomatoes, while beans and my favorite a tad of goat cheese! Oh and lots of pepper! We love it a bit spicy here. Will the kids eat this- no not mine, but they did surprise me.
I made Huevos Rancheros for the hubby on Fathers Day and the kids actually asked for some! Of course they wanted no salsa, no green onions and no salad on it. Just eggs and goat cheese on a tortilla. I can’t believe they ate it. These 2 are pretty hot and cold when it comes to eggs and well, when they laughed and said goat cheese I almost fell over. Now if I had only known that this would be more appealing than scrambled eggs it would have saved me alot of heart ache.

I'm surprised when my son tries anything these days because he is a REALLY picky eater. It's very rare for him to eat well with me. When he's my parents he eats like crazy, and they think I don't feed him.
