My kids love potatoes, but I find myself never having just enough time to get them cooked. Then I discovered that you can make them in the slow cooker. I thought it was brilliant! My husband watched me get these ready and he couldn’t believe that could taste so good being cooked in this way. The potatoes come out perfect. This is also a great Summertime trick so you won’t have to turn the oven on. Here is how you do it:
Slow Cooker Baked Potatoes:
Recipes serves 4-6
Ingredients:
4-6 medium sized potatoes
Toppings of butter, salt, and pepper to taste.
- Wrap potatoes in foil and place at the bottom of a 4 quart or larger slow cooker
- Cover. Cook 8 hours on low or 4 hours on high.
- They will be tender when pierced with a fork
- Remove foil serve with whatever topping you find desirable.
Honestly, it’s the quickest way to have potatoes for dinner. Just wash, wrap and place them in the slow cooker! Remember you don’t always just have to serve them as “baked” potatoes. You can peel and mash them, cool them and make a quick potato salad. Can you think of other ways to use baked potatoes? I’d love to hear your ideas! Do you make any other potatoes in the slow cooker? The best part is that you can just leave them there and walk away, instead of having to constantly monitor the 400 degree oven.
