What to do? Most moms I know NEVER eat breakfast! We feed our kids, pack their lunch and try to get on with our lives. If we are lucky we grab some fast food item or a coffee at the gas station. Now, I’m not a fan of the microwave, but sometimes it can be a life saver. So, when I found this recipe for a microwave coffee cup scramble I thought I’d give it a try.
Here is the scoop: 2 eggs, 2 Tablespoons of milk, salt and pepper to taste and mix in cup. 45 seconds on high in the microwave. ( I also added some grated parmesan cheese)
When the timer goes off, stir and microwave another 50 seconds. Microwaves vary so keep an eye on this so the consistency is right. The mix and eat! You can add some cheese or whatever you like.
I usually eat it right out of the cup, but I pulled it out and placed it in a bowl so that you could see it for yourself. Without cheese you are talking about 140 calories, and you have protein and vitamin D. Now how can you beat that!

We ate microwave scrambled eggs all the time growing up. So easy and no extra pans to wash.
